This five-course dinner brings together Paddlefish Executive Chef Steven Richard, Chef Justin Placeres of Otto’s High Dive, a MICHELIN Bib Gourmand-recognized Cuban restaurant and rum bar, and Chef Michael Collantes, chef-owner of the MICHELIN-starred Soseki Modern Omakase. The evening also marks a full-circle moment, as Collantes and Placeres began their culinary journey under Chef Steven’s mentorship, making this event both a celebration of talent and a meaningful reunion.

We were recently invited as media to check out the experience first hand. The menus focus on iconic Florida flavors — think Key Lime Pie, fresh seafood, citrus-inspired dishes, refreshing craft cocktails and local Florida brews. There’s even alligator on a menu or two. Dining options on the menu range from sit-down to grab-and-go.
